Chicken and Rice Recipe

Chicken and yellow rice recipe:

4-6 chicken breasts, boneless
1 package yellow rice
1 tablespoon butter or margarine
1 can mushroom soup
1 small onion, chopped
mushrooms, canned or fresh, chopped
1 teaspoon garlic, minced
salt & pepper

Place chicken breasts in large pot, cover with water. Bring to boil,
then simmer until chicken is cooked through (20-30 minutes). Remove
chicken breasts to plate to cool, saving cooking water. Measure out
enough water to cook rice (see package directions), and discard
remainder. Bring broth to boil and cook rice according to package
directions (you can use the same pot). Place cooked rice in baking
dish. In same pot, melt 1 tablespoon butter or margarine. Add onion,
mushrooms, and garlic, and saute five minutes. Add to rice. Add
mushroom soup to rice. Dice or pull apart chicken breasts and add to
rice. Mix rice, soup, and chicken thoroughly, adding salt and pepper
to taste. Bake at 350 just until heated through (10-15 minutes).

*Options: can also add peas, artichoke hearts, pimentos, red peppers,
or canned tomatoes if desired.
